In particular, there is an ingredient that comes from the warm corners of Central and South America with an oval shape and a bright green wrinkled rind: let's talk about the avocado! A pulpy fruit that is often found in the kitchen combined with fish! If you have never tried it, we invite you to experiment it with shellfish making spaghetti with avocado and prawns. A striking union between the delicacy of the prawns and the sweet juicy pulp of the avocado. The noodles, then, with their thin and light format, embrace the ingredients perfectly … an exotic mix of flavors ideal to serve for a summer dinner, thanks to its seductive freshness!

How to prepare avocado and prawn spaghettini

To prepare the avocado and prawn spaghettini started by cleaning the prawns. With your hands, remove the head (1) and gently extract the shell (2), keeping aside the waste that will serve to make the bisque. Make a cut on the back of each crayfish and using a tweezers extract the intestine (3).

Put the shrimp meat in the fridge and take care to prepare the shellfish (bisque). Peel an onion and cut into four parts, clean the leek removing the ends and the leaves greener and then cut into thin slices. Melt the butter in a large saucepan and when it is melted add the onion, leek and garlic (4). Let brown and brown everything, then add the scraps of shellfish and let them brown a couple of minutes over high heat, stirring with a wooden spoon and crushing the heads. Blend with white wine (5) and only when the alcohol has evaporated add the water to cover the whole carapace. Add the parsley, the black pepper into grains and salt to taste (6).

Lower the heat and simmer gently for at least 60 minutes. During which it will be necessary to froth the comics with a skimmer (7), taking care to rinse it every time in order to eliminate any traces of impurities. After the indicated time, the comic will have to be reduced more or less than half of the initial liquid, filter it with a narrow mesh strainer (8) and keep aside your warm cartoon (9).

Store your avocado and prawn spaghettini for a day at most, closed in an airtight container and stored in the refrigerator.

Try to blend the avocado to get a creamier consistency. If you do not like the taste of brandy try to blend with white wine!
